Friday Food, St. Patrick's Day Edition

I am determined to actually make some veganized Irish (or at least Irish-ish) food this year. I have Irish ancestors on both sides of my family, traditional Irish music is one of my great loves, my favorite color is green, Baileys and Guinness were pre-vegan faves, I could eat potatoes all day long, and so on and so on. Hell, I was even baptized Catholic as a baby. I should be celebrating St. Patrick's Day, right? Right. Here we go...

Colcannon (of course): Two different recipes here, one with kale from the Innocent Primate Vegan Blog (pictured right) and one with cabbage from VegCooking.

A Country-Style Vegan St. Patrick's Day Dinner
from Bryanna Clark Grogan. Included are recipes for Saint Patrick's Day Soup and Vegan Irish Oatmeal-Apple Crumble with Whiskey Cream Sauce, among others.

Dublin Coddle with Vegan Irish Sausages, with a side of insider info on Irish versus English terminology (hint: don't call them "bangers" in Ireland!), from FatFree Vegan Kitchen. (And yes, my love affair with the FatFree Vegan Kitchen continues.)

Lamb Stew Veganized and Soda Bread (pictured at the top of the post) from Vegan Appetite. I have to admit--even including the word "lamb" here creeps me out, but worry not: no baby sheep in this recipe.

And finally, vegan Baileys! If you do a Google search, you'll find a few different recipe suggestions for a vegan version of Baileys, but here's one that's floating around in several places (I'd give credit to the original poster if I could, but I have no idea where this originally came from).

Ingredients:
1 can coconut milk
2 tbs brown sugar
2 tbs chocolate syrup
2 tsp vanilla extract
3/4 cup whiskey (or to taste!) I suggest Jameson's.

Instructions:
Combine all ingredients thoroughly using a whisk, but do not froth. Keep refrigerated, preferably in a dark bottle. Old Baileys bottles are ideal!

Note:
If your coconut has separated into solid and liquid, be sure to mix or blend thoroughly first into a completely smooth liquid with no lumps.

    And vegan Bailey's - we just bought some coconut milk for the ice cream maker; I seriously hope we have some whiskey on hand, because this sounds delish!

    Food Not Bombs is an amazing project. It has spawned from the notion of anti-consumerism and working to reduce the wasteful habits of our society. The freegan movement advocates for this quite readily. Check out freegan.info!
